Ready for some white beans Mediterranean style? Celebrity Chef Isa Souza brings in the vibrant, cool summer breeze with a dish to please all palettes.

  • Ingredients
  • 2 ¼ cups (1 lb) of navy white beans
  • 2 cloves of garlic, crushed
  • 1 large yellow onion, chopped
  • 2 bay leaves
  • 2 tablespoons of chopped rosemary
  • 4 radishes, cut into thin slices
  • Extra virgin olive oil
  • Salt
  • Freshly ground pepper to taste

Preparation:
Pick over the white beans, discarding any misshapen beans or impurities. Rinse well and place in a large saucepan with plenty of water to cover. Let stand overnight or for a minimum of two hours. Drain well and set aside. In a large saucepan warm 3 tablespoons of olive oil over medium heat. Add garlic and stir-fry until soft. Then, add the onion. Stir-fry onions until soft. Add the white beans and bay leaves. Season to taste with salt and pepper. Cover with water and bring to boil over high heat. Reduce the heat to low and simmer until the beans are tender; about one hour. Remove from the heat and discard the bay leaves. Drain the beans. Place in its serving bowl. Add the chopped rosemary and radishes. Mix well and season again, in case you feel it needs more flavor. Finish by pouring some olive oil over the dish. Serve hot or cold. Perfect with lamb or any meat of your choice.
